This creation had a short but spectacular outing at Zumbo last year. It has to be in homage to the Religieuse at Laduree, but I think this Balmain version looks heaps better. “It’s almost too pretty to eat”, I said. But I say that about all his cakes.
LM - I can't remember what was in it! No doubt it was yummy, though.
Lorraine - you should have enough material to write a thesis. It is a big macaron with some sort of custardy filling. The little choux on top is so cute.
belle, is the filling made of custard and cream or something more exotic? Custard and cream is a match made in heaven imho...
