No Strawberries were harmed in this Bavarois

I have an admission to make - this was not my first attempt at making a simple Strawberry Bavarois. And it's all the more embarrassing because it is simple, just 2 ingredients whipped together.

So, how did I get it wrong? I really don't know, except that the jelly mixture started setting rather too quickly (it wasn't even in the refrigerator) before the evaporated milk got mixed into it. The final mixture therefore did not set and had do be drunk rather than eaten. Just like a strawberry milkshake, only lumpy!

I wasn't going to give up, so when I saw a man selling punnets of strawberries in the street the other day, I thought "Hmm, I'll get some and make something that has no strawberries in it - strawberry bavarois!". Cos that's the way I think.

Here is the second, successful attempt: thankfully, it looks pretty good!

Cheat's Strawberry Bavarois
serves 4

85g sachet strawberry jelly crystals
375ml evaporated milk

1. Place jelly crystals in a large bowl. Whisk in 100ml boiling water to dissolve, then allow to cool (but not too much!).
2. Add evaporated milk to the jelly mix and use a hand-whisk to beat until thick and frothy.
3. Pour the mixture into serving glasses and chill for at least 4 hours until set.
4. To serve, top each bavarois with whipped cream and strawberries, if desired.
