Anzac Biscuit Sundae with salted caramel sauce

ANZAC Day (April 25th) falls on a Sunday this year, so I thought it would be fun to create an ice cream sundae from the many Anzac biscuits that we will be baking.

I used my standard Anzac biscuit recipe.  Luckily, I baked them before my oven expired, otherwise I would have been extremely peeved - or even more peeved than I was when the oven blew.  By the way, the progress report on the oven is that the oven repairman was due to come last Wednesday arvo, but he called on Wednesday morning saying he had double-booked and could only reschedule for next Tuesday!Think calm thoughts, serenity now, serenity now...

I also tried a new caramel recipe, which is a little different to my usual caramel sauce. It was just on the right side of being burnt, and on top of the sundae, it is really good. 

Salted Caramel Sauce
makes 1 cup

Ingredients
1 cup white sugar
4 tablespoons unsalted butter
1/2 cup thickened cream
1/2 tsp salt flakes

Method
1.  Place the sugar and 1 tablespoon of water in a small saucepan over medium heat.  Bring to the boil without stirring, then let it boil until it becomes a golden colour, about 4 minutes.
2.  Then immediately stir in the butter to incorporate.  Remove from the heat, add the cream and salt and mix well.
3.  Pour some sauce over ice cream.  The sauce can be stored, covered, in the refrigerator for up to 1 week.

Making the caramel using a new recipe is always risky - almost burnt it this time, but it's still good.

Put some scoops of ice cream in a bowl. Crumble over an Anzac biscuit, then spoon over the salted caramel sauce.  Add some sliced banana if you like.

  2. Aww Bel. So sad to hear about the oven fiasco. If this helps, the vietnamese never use ovens. So maybe stick to vietnamese recipes... LOL :)

    I hope your oven gets fixed soon, or better still, I hope you get a brand spanking new one with lots of different knobs and buttons.

  3. I like what you did to your standard Anzac cookie. I didn't even think to sprinkle it on top of ice cream. That crunch would be so delicious with the creamy ice cream.

  6. What a bummer about the oven repair man double booking! I hated being without an oven, seems that the only recipes I wanted to make when I had no oven only involved baking! Baking is so good though.

  9. Oh this looks great. I was thinking that the anzac biscuits i made could be used as a crumble (when i was in panic mode yesterday!). Luckily these were made pre-oven explosion (hopefully the oven repairman will keep his word for your sake)!

  10. Oven man better come soon, or he'll be suffering the wraith of all of us :)

    I have been waiting for my stovetop to be fixed for THREE MONTHS but this is due to property management incompetence and not due to a oven man unable to manage his time effectively. I am praying this week will bring us some stovetop joy.

    I need some of these sundaes to take my mind off it. Excellent use of anzacs!

  14. Oh Bel, salted caramel has got my mind fluttering-seriously. I love the idea of that...I don't know what Anzac is though, so I'm going to click on that link.

  15. I don't think there is a better way to commemorate Anzac day than with such a gorgeous looking sundae. Especially adding that salted caramel!
