…I choux choux choose you…

This creation had a short but spectacular outing at Zumbo last year. It has to be in homage to the Religieuse at Laduree, but I think this Balmain version looks heaps better.
“It’s almost too pretty to eat”, I said. But I say that about all his cakes.

First tasted in November 2007.

  2. OOOh I adored Laduree's Religeuse de la Rose so I think I should really try this-for research purposes ;)

    Is it a macaron biscuit and do you know what the filling is? I can't work it out from the picture :S

  3. LM - I can't remember what was in it! No doubt it was yummy, though.

    Lorraine - you should have enough material to write a thesis. It is a big macaron with some sort of custardy filling. The little choux on top is so cute.

  4. B.F THE FILLING WAS A LIGHT SOFT MERINGUE,WITH A MELT IN THE MOUTH MANGOJEL AND A HINT OF PASSION FRUITJUZE.MOST SIMPLY HAS TO BE A SIN UMMMM..
